Kangaroo Fillets with Blueberry Sauce
(for 4 people) Ingredients:
Method: Slice kangaroo fillets to approx 100g portions and gently tap with meat mallet to slightly flatten out, refrigerate. Mix into soft butter – blueberries, chives, salt and pepper. Place butter into grease-proof paper and roll to firm and refrigerate. Heat pan with oil, seal off kangaroo fillets on both sides with salt and pepper and place in warm oven for 10 minutes and allow to cook through. Meanwhile cut butter into rounds – keep in cool place. Take out fillet and put onto plate. Place butter on top of each fillet and allow to melt slightly – then serve.
