Fillet of Kangaroo with Dried Fruit
Ingredients:
Method: Gently fry onions in pan without colouring, add dried fruit, Cassis, red wine and reduce by half. Add brown sauce and again reduce by half. Season. Season Kangaroo with salt and ground black pepper. Heat oil in frypan and seal all sides of kangaroo fillet. Place in oven and cook until medium-rare. Remove from pan. Pour sauce on plate and arrange kangaroo neatly on top.
