Fillet of Kangaroo with Dried Fruit

Ingredients:

  • 4 x 200g Kangaroo fillet (trimmed)
  • 100g Diced dried fruit
  • 100 ml Red Wine
  • 100ml Brown sauce
  • 50ml Cassis
  • 50g Chopped Onions
  • 20g Butter
  • Oil

Method:

Gently fry onions in pan without colouring, add dried fruit, Cassis, red wine and reduce by half.

Add brown sauce and again reduce by half. Season.

Season Kangaroo with salt and ground black pepper. Heat oil in frypan and seal all sides of kangaroo fillet. Place in oven and cook until medium-rare.

Remove from pan. Pour sauce on plate and arrange kangaroo neatly on top.
