Hi!,

I got to your site through Don Burke's - looking for recipes. I wanted to write to let you know of my experiences with kangaroo meat.

I first began eating it 2 years ago. It took a bit of getting used to the idea of eating kangaroo - I mean, we are raised to love these things - but I can honestly say it is the best meat I've ever eaten and I rarely eat any other red meat now.

I first began eating it because of its low fat content - I had some health problems to contend with. Needless to say, I'm much healthier now. I also feel that I am helping to preserve the kangaroo - the animals we eat are the least likely to become extinct!

I was a bit concerned with your comments re cooking the meat that one should soak it in oil!! Ugh! For me, that defeats the purpose of eating it. Basically I use it much the same as I did any other red meat, just cook it for less time. I substitute it for the beef in those recipes which say beef and so far I haven't been disappointed. Oh, and I rarely use oil at all! If I'm worried about it drying out, I add some port! :-)

I wish there wasn't a mind set against eating kangaroo. My immediate family - husband and son - love it, but getting my extended family to eat it is harder going but there is definitely a swing toward it.

As you may appreciate the 'forces of darkness' which oppose the kangaroo industry sometimes get me a bit down, emails like yours really help.

Great to hear you've been so successful with cooking kangaroo, in reality it can be cooked exactly the same as any other meat once you get to know it.
